Purple fleshed dragonfruit grown in Hilo.
Dragonfruit is best enjoyed when fully ripe! The skin gets thinner and the fruit gets sweeter and more flavorful the longer you wait. The winged fruit pedals will lose most of their green color and begin to dry/shrivel as the fruit becomes completely ripe.
*Pro-tip: Wait until they are just 'ugly' enough that you wonder if it is too ripe. If it melts into a wet puddle, then you have gone too far.
