Silk Fig bananas have white pulp and are slightly drier than most dessert (non-cooking) bananas. They should be fully ripe before consuming, as they can be astringent and starchy if not allowed to ripen completely. Sometimes referred to as the "true" apple banana, they are different from the Hawaiian apple banana and have a unique tart and sweet flavor.
