Large, green chayote squash, from Hakalau.
Chayote squash, or pipinola, is an edible fruit in the gourd family. The flavor and texture are very similar to white potatoes, making them versatile as they absorb flavors easily. The skin is tough and should be removed, the seed is edible and the fruit is most often used lightly cooked for it's crisy consistency.
Chayote are very easy to grow and can be sprouted by leaving the fruit on the counter until a shoot appears from the stem end. Like squash, the flowers, young shoots, leaves and seed is edible. The vine itself is hearty and very beautiful.
