A Polynesian staple starch, taro is a corm that is peeled and steamed/boiled before serving. It is a dense starch but with a nice, nutty flavor. Poi can be made from some softer varieties, while other varieties of "table taro" are great as potato substitutes as they hold their shape and are great for roasting and grating.
