2-4 pack of grass-fed, lamb loin chops from Kona, approx. 0.75 - 1 lb. per package.
Loin chops are much thicker than other lamb chops (1 - 1.5 inches thick), and are, by far, the most tender. Loin is very lean and, in other animals, this usually results in a less flavorful, although extremely tender, cut. Lamb has so much natural flavor that even the lean loin is still delicious, making it a favorite cut, bringing tenderness and flavor together.
This cut is best treated like a good steak, comparable to a porterhouse or t-bone beef steak, and is excellent panfried or grilled.
