Shoulder chops are neighbors of arm chops and are a great value compared to loing and rib chops. While shoulder chops tend to have more bone and connective tissue, making them slightly less tender, they are packed with flavor and are super easy to cook. Shoulder chops are thinner chops compared to the rib and loin chops, so marinading will help lock in moisture when pan-frying or grilling. These chops, like other lamb chops, are also excellent braised.
