Kale & Quinoa Salad

Another fast but filling meal! This fresh, bright, crunchy salad is the perfect meal for these warm summer days but doesn't skimp on nutrition! With plant-based protein and loads of veggies, this refreshing dish can double as a main or a side and won't leave you feeling hungry. Customize with your favorite veg, nuts, or salty cheeses!

Salad:
1 cup cooked quinoa
1/2 lb de-stemmed kale, chopped
2 tomatoes, chopped
1 bunched parsley, chopped
Half a red onion, diced
1 red bell pepper, chopped
1 orange bell pepper, chopped
2 carrots, shredded
Feta cheese, crumbled (optional)
Dressing:
6 garlic cloves, pressed
1/3 cup of olive oil
4 tbsps of apple cider vinegar
Salt and pepper to taste
1/4 tsp cumin powder (optional)
Sprinkle of cayenne powder (optional)
Bring 2 cups of water (or broth) to a boil, add a generous pinch of salt and quinoa
Lower quinoa to a simmer and cook covered for about 15 minutes
While quinoa cooks, prepare salad ingredients and mix in a large bowl
Cover salad and place in fridge
When quinoa is cooked, turn off heat but leave covered for 5-10 minutes
In a jar or small bowl, combine dressing ingredients (if using a jar, I like to shake all the ingredients together), set aside
Add quinoa and dressing to the other salad ingredients and mix well
Add salt and pepper to taste
Enjoy!
This salad gets even better if left to chill and marinade overnight.
