Abiu, also known as the "Emperor's Golden Fruit", is ready to eat when the skin is yellow. If there is still a little green color by the stem, the flavor is still sweet and wonderful, but the texture of the flesh will be a bit firmer, which some will prefer. The cream-colored flesh is nearly fiberless with a succulent texture, sweet and juicy, with a vanilla custard flavor.
To eat, halve or quarter the fruit into wedges, discard the few seeds in the center of the fruit, and eat around the skin. Be warned - the skin contains latex and can leave a sticky residue on utensils and lips. But don't worry, it's worth it!
